Pave d’ affinois / Cow’s milk soft cheese
This soft ripened cheese is made in a small square shape referred to by its name, pave, meaning square or rectangular paving stone in French. With proper aging this sweet mild cheese will ooze from its rind.
Taste: creamy and mild
Compliments: Goes well with a french loaf or multigrain roll.

Crottin Maitre - goat's milk aged cheese
Maitre Seguin is a living cheese. It is not wrapped and can thus ripen slowly, gaining in character, when kept in the fridge at 4°-6° C.
After three weeks it becomes dry and crumbly and is excellent served with aperitifs. The best time to serve is at the end of the meal - white wines when the cheese is young or red wine when it has matured. With fresh bread, it is ideal for snacks or wine and cheese parties.
The characteristic goat taste increases steadily when the cheese is kept at 4°-6° C.
Appropriate wines: Red or white Sancerre, Morgan, Gaillac

Cabecou Perigord - semi-aged goat's milk cheese |
It is a white, soft, creamy interior cheese. Flavor varies according to age from creamy and sweet.
Cabecou can be related to Bouton de Culotte, Crottin de Chavignol, Pelardon, Rocamadour. Those cheeses are flawless and presented in the typically fancy, pleasing idiom. Their flavor is the very essence of nutty - an altogether perfect Perigord cheese.
Texture: The thin rind is striped, the pate an ivory color, creamy and soft and melts on the palate.
Taste: Fresh, it is pliant and creamy, with a subtle, delicate taste of milk. After fifteen days its delicate white crust becomes covered with little dots of blue mold and its taste is permeated with the flavor of hazelnut.
Appropriate wines: Red wines: Bergerac, Cabernet from Chile, Saint Joseph.

Camembert du Bocage cow's milk soft cheese |
Has typical Camembert characteristics such as white rind and creamy yellow pate. Tends to be a little salty sometimes. This version of Camembert does tend to be stronger than you would expect from a Camembert.

A favorite all around the world, Roquefort is made from ewe's milk and matured in the caves of the Rouergue district of France, who have the sole rights to the maturing of this cheese, thanks to a charter signed by Charles VI in 1411 year.
An excellent blue cheese with a very smooth texture and pronounced smell and flavor. Pair with a full-bodied red wine for best taste.
